Strawberries and Chocolate Nachos

I love the website www.ourbestbites.com! So many great recipes! This one caught my eye. How EASY is that?! Pretty healthy too and only a few ingredients!

–Baked Cinnamon Chips (lightly spray with pam flour tortillas. Bake at 350 for 10-12 minutes or until lightly golden and cut into triangles with pizza cutter). After cooked lightly brush on butter and sprinkle cinnamon and sugar mixture.
-Diced strawberries tossed with granulated sugar and left to sit for 10 minutes.
–Melted chocolate chips (to your liking)
–Redi Whip or Cool Whip
Place Cinnamon Chips on a platter and top with diced strawberries. Drizzle with melted chocolate and top with whipped cream. I know, super complicated!

Easy EASY BBQ Chicken Pizza

So I made this for dinner and it was requested I put this up.
This turned out soooo good.

Dough:
Here's my secret. I bought it from the bakery. Did you know that you can ask the bakery at your local grocery store to sell you their french bread dough? Well now you do. It only cost $1.85. When you get home let rise for like an hour. Make sure you cover it. Roll out on pizza pan that has been sprinkled with cornmeal. Bake at 400 for like 15-20 min.

Take crust out of the oven and add the following toppings:

BBQ Sauce
2 On-the-Vine Tomatoes, diced
1 small red onion, sliced
2-3 chicken breasts, boiled and shredded (I used a rotisserie from the store)
Shredded motzerella cheese
Cilantro

Put pizza back in oven and bake for another 15 minutes or until cheese is melted.

Bruschetta

6 Roma tomatoes, diced
1/4 cup olive oil
2 cloves fresh garlic, minced
S & P to taste
3 Tbsp. Balsamic vinegar
1/4 cup fresh basil, chopped

Mix and refrigerate all day or overnight. Toast baguette slices to light brown under oven broiler.
Top with veggie mixture, then top with a thin slice of fresh Mozzarella cheese (or can top with grated Pepper Jack or Mozzarella cheese). Broil until cheese melts.

Orange Broccoli Pasta with Lemon Popppy Seed Drsg

1 lb Broccoli, cut into small florets
2 (4 oz) cans artichoke hearts, cut in halves
1 (6oz) can small pitted olives
2 (11 oz) can mandarin oranges, drained
1 1/2 cups smoked turkey or mesquite deli turkey, cut in strips
1 red onion, thinly sliced
1 (9oz) pkg Fettuccine (fresh) or bow tie pasta - cook according to directions-Cool
1/3 cup grated Asiago cheese
Cut brocccoli into bite-size pieces and place in a large bowl. Drain olives and artichoke hearts, then add broccoli. Add thinly sliced red onion and meat strips. Toss lightly. Rinse cooked pasta in cold water and add to other ingredients. Pour lemon dressing over salad and mix to coat. Add drained oranges last and toss lightly. Sprinkle asiago cheese over salad. Serves 10-12
Lemon Poppy Seed Dressing:
1/2 cup extra light olive oil
1/2 cup lemon juice
1 tsp grated lemon rind
1 1/2 tsp salt
1/2 tsp pepper
2 cloves garlic, minced
1 Tbsp poppy seeds
Mix lemon juice and seasonings together and slowly whisk in oil.

Protein Waffles

My new favorite recipe! My kids even loved it. Delicious and filling! The best part is the topping!

Protein Waffles:
1 cup oat flour (just put oats in the blender to make into powder)
1 cup oats
2 scoops protein powder (plain or vanilla)
1/4 cup greek yogurt-I like Fage from Costco
1/2 cup cottage cheese
1 cup almond milk
1 egg
1 egg white
1/2 tsp. salt
2 tsp. vanilla
1 tsp. baking soda.
1/4 c. splenda (opt.)
Mix w/ whisk and pour in waffle maker. Instead of spraying Pam, I put olive oil in spray bottle. Top w/ greek yogurt mixed w/ sugar free jam- this is the BEST part! Also good with sugar-free syrup and spray butter. Delicious! Makes 9-10 waffles.
