Homemade Protein Bars

This is one of my new favorite recipes. It tastes like No-Bake Cookies only its LOADED with protein!

2 1/2 c. peanut butter (I like the natural kind because its runnier- i.e. Adams brand)
2 c. honey (I like the raw kind taste better) or agave
2 c. protein powder or powdered milk (I like the chocolate protein powder-makes it taste like no-bake cookies)
3-4 c. oats
1/4 c. wheat germ
2-4 Tbsp. ground flaxseed

Mix in bowl. Press onto a cookie sheet. Stays together better if placed in the fridge. Great healthy snack for the kiddos too!! Enjoy!

Healthy Whole Wheat Bread

By popular request, here is the recipe for the BEST and EASIEST homemade whole wheat bread! This recipe is very giving meaning add anything you would like (nuts, seeds etc.). You can't mess this one up!

6 c. warm water
2/3 c. olive oil
2/3 c. honey (or agave)
2 Tbsp. active dry yeast

Blend 2 minutes then add:

2 Tbsp dough enhancer
1/3 c. vital wheat gluten
2 tsp. salt
6 Tbsp. ground flaxseeds
1/2 c. xylitol (natural sweetener)- I have used Splenda too
Note: If you want to add any other nuts or seeds now is the time.

Mix and add:
11 cups of whole wheat flour or until sides of bowl are clean.

Knead 5 minutes. Form into 4 loaves and place in greased bread pans. Let rise 30 minutes. Bake at 350 for 35-45 minutes.

Lisa's Taco Soup

Fairly healthy and really quick/easy.

3 cans diced tomatoes
1 jar mild salsa
1 can corn (drained and washed)
1 can red kidney beans (drained and washed)
1 packet taco seasoning
1 small onion (caramelized)
3 large chicken breasts (cooked and cubed)

Cook all ingredients in large pot on stove over medium-high heat until all the way warm enough. Serve immediately. You can serve with cheese, sour cream and tortilla strips. I like to serve it with corn bread as well.

Salmon Marinade

2 lbs. salmon steaks
1/2 cup brown sugar
4 Tbsp. melted butter
3 Tbsp. soy sauce
2 Tbsp. lemon juice
2 Tbsp. water

Marinate for several hours. Broil for 7 min on each side. Baste
often. Serve with fresh lemon slices, rice and vegetable.

Baked Asparagus

2 lb asparagus (2 bunches)
1/2cup balsamic vinegar
1/2 cup olive oil
S&P
Parmesan cheese

Cut a few inches off asparagus stem. Place in a 9x13 baking dish. Mix vinegar and oil and pour over asparagus. Sprinkle with S&P and Parmesan cheese. Bake 450 degrees for 15-20 min. Place asparagus on a serving platter and garnish with more Parmesan cheese.

Mango Salsa Slow Cook Chicken

4 Chicken Breasts
24 oz or more Mango Salsa

Slow cook on low.
I also placed 4-5 baked potatoes (washed and kept whole)
on top and cooked with the chicken and mango salsa.
Serve chicken with potatoes and a vegetable. Easy!
